Recipe: Rinse the rice and lentils thoroughly. Mix the basmati rice with the masoor dal and moong dal and soak this mixture for an hour. Add the cummin seeeds and red chillies and let them splutter for a few seconds. Heat oil in a pressure cooker. Stir fry the chopped onions and ginger-garlic paste till the onions turn translucent and the aroma of the cooking permeates the air. Add the potato and saute for a while. Now add turmeric powder,chilly powder and cummin-coriander powder and sea salt.Add a little water and simmer on a low flame till all the water evaporates on on its own and the vegetables are cooked. Now add the basmati rice and lentilsand saute the mixture till the rice is coated with the gravy. Pour two cups of water and pressure cook the khichdi for four whistles. This dish is a meal in itself and is delicious and nutritious
