Pumpkin with Aubergines

Quantity Ingredient Details
50 gm. Baby brinjal cubed
50 gm. Pumpkin Large quarter slices
20 ml. Cold pressed coconut oil or mustard oil
50gm. Potatoes Large quare slices
50 gm. Spinach sliced
5 gm. Turmeric powder Haldi powder
pinch Sea Salt or rock salt
5 gm. Red Chilly Powder Lal Mirchi powder
Three. Bay leaves
5 gm. Panchphootan Kala jeera, saunf, soris,methi and til
Two Whole Red Chillies Lal Mirchi
5 gm. Turmeric Powder Haldi Powder
Pinch Sea Salt or rock salt


Heat oil in a wok, Add the bay leaves and red chillies. Add panch phootan and stir till they splutter. Now add all the cut vegetables and stir fry for a while. Then, saute on a low flame with a closed lid till the vegetables are done. Add the red chilly powder,cummin-coriander powder,turmeric powder and sea salt Stir intermittantly, Cook on a low flame Add 10 ml. of water and cook with a closed lid till all the water evaportaes on its own Serve with red boiled rice. Mixed vegetables with panch phootan is nutritious, healthy and delicious. I had this dish at the circuit house at Baripada
