Masala Rice

Quantity Ingredient Details
100 gm. Coriander leaves finely cut
One small onion finely sliced
10 gm. Cold pressed coconut oil or sesame oil
Pinch. Sea Salt or rock salt
100 gm. Long grained Rice Dehradun Basmati
100 gm. Carrots Boiled and diced
100 gm. Green chilly thinly sliced


Recipe:

Heat oil in a pressure cooker. Stir fry the chopped onions with cummin seeds till the onions turn translucent and the aroma of the cooking permeates the air. Saute for a while. Add the garam masala and a pinch of sea salt. Add the boiled diced carrots and green chilly next. Then add a little water and simmer on a low flame till all the water evaporates on on its own. Now add the basmati rice and saute the mixture till the aroma of the rice pervades the air. Pour two cups of water and pressure cook the rice for two whistles. Serve piping hot.
