Kerala coconut stew

Quantity Ingredient Details
10 gm. Lime juice to be made fresh
10 gm. pepper powdered
50 ml. Kerala coconut oil or cold pressed sesame oil (unbranded)
5 gm. nutmeg finely powdered
pinch Sea Salt or rock salt
100 ml. Coconut Juice Make fresh by grating coconut and tying in a porous cloth
50 gm. Carrots cubed
Two bay leaves
50 gm. Potatoes boiled and cubed
5 gm cinnamon powdered


Recipe:

Blend Cinnamon,nutmeg and black pepper powder with some coconut juice to make a paste. Boil the Potatoes, beans and carrots in an open pan till they are done. Heat oil in a wok. Add the spice paste and saute on a low flame till the aroma of the cooking permeates the kitchen. Add the remaining fresh coconut-juice and sea salt and simmer for a few minutes on a low flame. Now add the boiled potatoes,carrots and beans to the coconut huice based gravy. Coat the vegetables with the gravy and cook for ten minutes on a low flame. Serve hot with idlis.
