Recipe: Rinse the potatoes thoroughly. Blanch the tomatoes for thity minutes. Heat oil in a wok.Add the cummin seeeds and red chillies and let them splutter for a few seconds.Add the sliced ginger,sliced onions and saute for a minute. Stir fry till the aroma of the cooking permeates the air. Now add turmeric powder,chilly powder and cummin-coriander powder and sea salt.Add a little water and simmer on a low flame till all the water evaporates on on its own. Now add the blanched tomatoes and saute the mixture till the tomatoes are coated with the gravy. Fry the tomatoes till they are done. Serve with hot phulkas.
